While it is a common habit and important to ensure vegetables are properly cooked, cooking your vegetables until they are very soft destroys heat-sensitive vitamins such as vitamin C. Cook your vegetables lightly for approximately 4-5 minutes. Some vegetables could also be eaten raw to maximize nutritional benefits.
